  • 1 onion, chopped
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 pack of vegan sausage, sliced
  • 2 cups baby spinach
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
